Good for Your Gut Green Goddess Dip

In addition to being tasty, this dish contains pre and probiotics. Probiotics are “good” bacteria; these microorganisms may help with digestion, immune system function and offer us protection from harmful bacteria. Prebiotics are non-digestible carbohydrates that act as food for probiotics. Probiotics are found in fermented foods such as kefir and sauerkraut, while prebiotics are found in plant foods such as bananas, onions, garlic, oatmeal, lentils and artichokes.

Ingredients

  • ¼ cup organic plain kefir
  • 1 small ripe avocado
  • 2 T fresh lemon juice
  • 1 green onion, white and light green parts only
  • 1 large handful of parsley leaves
  • 1 large handful of cilantro leaves
  • 1 medium garlic clove
  • Pinch of kosher salt

Directions

  1. Add all ingredients into the pitcher of a high-powered blender. Blend on high until smooth.
  2. Serve immediately with your raw vegetables or whole grain crackers, or store in an air-tight container in your refrigerator for up to three days.
  3. Using ¼ cup of kefir produces a thicker sauce, more suitable for dipping. If you'd like to serve this sauce as a salad dressing, we recommend adding an additional ¼ to ½ cup of kefir!
