Sardine Salad

Ingredients

•    4 tsp. extra-virgin olive oil
•    2 tsp. grated lemon zest
•    Juice of 2 lemons
•    2 tsp. Dijon mustard
•    2 T chopped fresh basil
•    2 T chopped fresh parsley
•    2 scallions, white and green part, chopped
•    2 celery stalks, diced
•    2 3.8 oz. cans water or olive oil packed sardines, drained
•    Salt and pepper to taste

Directions

  1. Combine oil, lemon zest and juice, mustard, parsley, basil, scallions, and celery in a bowl.
  2. Gently fold in sardines and season with a pinch of salt and pepper
  3. Serve over lettuce or with whole grain crackers.

Yields 4 servings.
