Ingredients
• 4 tsp. extra-virgin olive oil
• 2 tsp. grated lemon zest
• Juice of 2 lemons
• 2 tsp. Dijon mustard
• 2 T chopped fresh basil
• 2 T chopped fresh parsley
• 2 scallions, white and green part, chopped
• 2 celery stalks, diced
• 2 3.8 oz. cans water or olive oil packed sardines, drained
• Salt and pepper to taste
Directions
- Combine oil, lemon zest and juice, mustard, parsley, basil, scallions, and celery in a bowl.
- Gently fold in sardines and season with a pinch of salt and pepper
- Serve over lettuce or with whole grain crackers.
