Neat Loaf

Ingredients

•    2 cups cooked brown rice
•    1 cup walnuts, finely chopped
•    1 onion, finely chopped
•    ½ medium bell pepper, finely chopped
•    2 medium carrots, shredded or finely chopped
•    1 cup wheat germ or 1 cup ground flax seed
•    1 cup quick-cooking rolled oats
•    ½ tsp. each: thyme, marjoram, sage
•    2 T soy sauce
•    2 T stone ground or Dijon mustard
•    ¼ cup Barbecue sauce or ketchup

Directions

  1. Preheat the oven to 350 F.
  2. Combine all the ingredients except the barbecue sauce or ketchup.
  3. Mix for 2 minutes with a large spoon. This will help bind it together.
  4. Pat into an oil-sprayed 5x9” loaf pan and top with barbecue sauce or ketchup.
  5. Bake for 60 minutes.
  6. Let stand 10 minutes before serving.
