Ingredients
- 2 cups pre-cooked brown rice
- 3/4 cup vanilla flavored soy or almond milk
- 1 egg
- 1/2 cup diced pitted dates
- 1/2 teaspoon cinnamon
- 2 T ground flaxseed meal
Directions
- Whisk soymilk and egg until blended.
- Add in rice, dates, cinnamon and mix to evenly distribute.
- Put into a small baking dish (1.5-2 quart) that has been lightly coated with oil.
- Sprinkle flaxseed meal on top.
- Cover. Bake in preheated oven at 350 degree for 30 minutes.
- Delicious warm right out of the oven!
