Rice Pudding

Ingredients

  • 2 cups pre-cooked brown rice
  • 3/4 cup vanilla flavored soy or almond milk
  • 1 egg
  • 1/2 cup diced pitted dates
  • 1/2 teaspoon cinnamon
  • 2 T ground flaxseed meal

Directions

  1. Whisk soymilk and egg until blended.
  2. Add in rice, dates, cinnamon and mix to evenly distribute.
  3. Put into a small baking dish (1.5-2 quart) that has been lightly coated with oil.
  4. Sprinkle flaxseed meal on top.
  5. Cover. Bake in preheated oven at 350 degree for 30 minutes.
  6. Delicious warm right out of the oven!
