Vegan Tahini Green Goddess Dressing

This bright green dressing tastes fresh and vibrant. It can be used as a salad dressing, as a dip, as a sauce on vegetables, and even on fish and poultry. You will need to adjust the final balance based on your palate and your ingredients. For instance, if you use Meyer lemon, you will need more vinegar, and you might omit the honey.

Ingredients

  • 1/4 cup tahini
  • 1 clove garlic
  • 1-1/2 packed cups mixed fresh herbs such as basil, dill, cilantro, parsley, chives, mint, tarragon, scallions
  • Juice and zest of 1 lemon
  • 1/4 cup extra-virgin olive oil
  • 2 T apple cider vinegar
  • 1 to 2 tsp. honey
  • 2 tsp. white miso
  • 1 tsp. soy sauce or tamari
  • Sea salt and fresh pepper to taste
  • 1/4 cup hot water

Directions

  1. Place all ingredients in a blender or food processor, adding the hot water as necessary to facilitate blending.
  2. Blend until smooth and creamy.
  3. Taste and adjust balance and flavor with vinegar, oil, honey, tamari, and salt, and pepper.

Yields 1½ cups or 12 Servings (2 T each)
