
Ingredients
- 2 medium sweet potatoes or yams, well-scrubbed
- 2 tsp. olive oil
- 2 tsp. dried minced onion
- 1/4 tsp. salt
- 1/2 tsp. ground pepper
- 1/2 tsp. garlic powder
Directions
- Preheat the oven to 375 degrees F
- Line a rimmed baking sheet with parchment paper
- Slice each potato in half, then slice each half lengthwise into 4 or 5 pieces
- Place the potatoes in a bowl and coat well with the oil
- In another small bowl, mix together the dried minced onion, salt, pepper, and garlic powder
- Sprinkle over the potatoes and toss well, making sure to distribute the seasonings evenly
- Arrange the potatoes on a baking sheet and bake, stirring once or twice, for 20 to 30 minutes
- Serve immediately
