Our dietitian Greta Macaire, MA, RD. CSO, has selected the following recipe. Be sure to check out our online video library of our nutrition workshops.
Ingredients:
- 1 bunch kale
- Olive oil spray
- 1 tsp sea salt
Directions:
- Preheat oven to 350°.
- Line a cookie sheet with parchment paper.
- With your hands or kitchen shears, remove the leaves from the thick stems and tear into bite-size pieces.
- Wash and thoroughly dry kale with a salad spinner.
- Spray kale with olive oil and sprinkle with sea salt.
- Bake until the edges are brown, being careful not to burn, around 10-15 minutes.
Try experimenting with other flavorings like onion or garlic powder, tamari, or nutritional yeast (gives a nice, cheesy flavor).
